That's a good question actu...Hi ShinraiTenchi! That's a good question actually. I'm lactose intolerant too, but if the cheese is the only dairy thing I'm having that day I'm usually okay. If I', having a lot though I take 4-5 of those lactaid pills a half hour before I eat (does this work for you?). I'd check your grocery store or a specialty store and see if they have any lactose-free cheeses (they do exist!). Else, I suppose you could try a thin slice of tofu. Or, better yet, since it's supposed to be "white" colored, why not make an egg sheet of just egg whites? There's an idea! If you can tolerate a little lactose, just remember that the harder the cheese (Parmesan or Gruyere) will have much less lactose than a softer one.
